MAINE CRAB CAKES
ingredients
- 1 lbs crabmeat
- 2 TBLS mayonnaise
- 1 Egg
- 2 tsp Old Bay Seasoning
- 2 Scallions, chopped fine
- 1/4 C diced fine bell pepper
- Salt and Pepper to taste
- 2 C bread crumbs (approximately)
- 2 - 3 TBLS Mayonnaise
- Olive or vegetable oil, as needed

Stir in peppers, seasonning, mayonnaise and crab meat. stir in 1/2 cup of bread crumbs or as much that is needed to bind the mixture. Shape into 4-6 Cakes. Place on a plate and chill for 1 hour in refrigerator. Dip each cake into beaten egg and then into bread crumbs and set aside.

In a large skillet, heat olive oil to medium high heat and pan-fry each crab cake until they are golden brown on both sides. Use enough oil to come halfway up the sides of the cakes. Place the cooked crab cakes on a paper towel briefly to eliminate excess oil. Serve with tarter sauce other cream sauce.
