Baby Pizzas

ingredients

  • 1 ball pizza dough (see recipe below if not using frozen)
  • 5 oz gorgonzola cheese, crumbled or mozzarella, shredded
  • 5 oz cherry tomatoes quartered
  • olive oil
  • 1/3 C fresh basil leaves, torn into pieces
  • salt and black fresh pepper
Pizza Dough
  • 1 C warm water
  • 1 envelope active dry yeast
  • 1 tsp honey
  • 2 tblsp olive oil
  • 3 C flour
  • 1 tsp salt
  • yellow cornmeal for sprinkling baking sheet

    Preheat oven to 475

    Roll out dough into 1/4 inch round

    using 2 1/2 " cutter, cut out 30 circles

  • 4

    Arrange on 2 large baking sheets

  • 5

    SPrinkle on cheese, top with tomatoes, pressing them into dough gently.

    Bake until golden (10 min)

    Drizzle with oil, sprinkle on basil,salt and pepper

    Combine water, yeast, honey and 1 tblsp oil

    let sit 5 minutes

    add 1 1/2 cups flour and salt

  • 4

    mix/knead by hand

  • 5

    make into ball, coat with remaining oil

  • 6

    cover with plastic wrap and let sit 1 1/2 hrs.
