Roast Potatoes
The crispy treat for a Friday night. These are too good to ever have any leftovers. This recipe courtesy of Joan, with a few minor changes.
ingredients
- Potatoes 1-2 large per person
- parve solid margarine (nucoa)
- olive oil
- salt
directions
peel potatoes and cut up into even pieces. Put into salted cold water. Bring to boil and allow to cook 5 mins. Drain in a sieve. Allow to dry well and shoogle around in sieve to give rough coating on potatoes. Put in roasting pan and allow heat to melt cut up margarine. Make sure every surface of potatoes has a film of melted margerine. Add a little olive oil if wanted to help. Then put in 350 -375 convection oven till brown and crispy, about 1 1/2 hours. Turn half way through cooking.
notes
Don't turn down oven below 350 or potatoes will go soggy. Make sure not too much oil..should only be enough to roast in, (not fry!!)
