Chicken & Sausage Gumbo
Possible suggestions Old bay? in seafood version? many people add stewed tomato? or 1/4 teaspoon cayenne for heat thyme and basil are commonly found in other recipes too
ingredients
- 2 lbs chicken
- 12-16 oz Sausage (Andouille or a Southern/Cajun style if available)
- 2 cups flour
- 1 1/2 cups oil
- 12 cups chicken broth
- or 8 cups chicken broth + 4 cups water
- 3 bay leaves
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 large onion (diced)
- 1/2 bell pepper (diced)
- 3 stalks celery (diced)
- 3 green onions (chopped)
- 4 garlic cloves(minced)
- 1 cup sliced okra (fresh or frozen)

Traditionally when picking a thickener for your gumbo you choose between okra or gumbo file, but we use both! Okra was used during the summer months and file (ground sassafras root) in the winter. Mix file in your bowl, not the pot or it becomes stringy.
