Nicole's Ricotta pie
Nicole and I tried this sweet treat once. It tastes very good. It reminded Nicole of Carmella Sopranos cooking.
ingredients
- 1 container (48 oz) Ricotta cheese
- 2 Cups sugar
- 6 eggs
- 1 cup cooked pastina
- 1 tsp. vanilla
- 16 oz. crushed pineapple (drained as well as you can)
- 1 pie crust- not frozen
- nutmeg
- whipped cream
directions

mix cheese, sugar, eggs, pastina and vanilla. Pour into pie crust.

Bake at 350° for 2 hours or until top is firm.

Allow to cool.

Top with pineapple, then

top with whipped cream and nutmeg.

Serve chilled or at room temperature.
