Nicole and I tried this sweet treat once. It tastes very good. It reminded Nicole of Carmella Sopranos cooking.

ingredients

  • 1 container (48 oz) Ricotta cheese
  • 2 Cups sugar
  • 6 eggs
  • 1 cup cooked pastina
  • 1 tsp. vanilla
  • 16 oz. crushed pineapple (drained as well as you can)
  • 1 pie crust- not frozen
  • nutmeg
  • whipped cream

directions

  • 1

    mix cheese, sugar, eggs, pastina and vanilla. Pour into pie crust.

  • 2

    Bake at 350° for 2 hours or until top is firm.

    Allow to cool.

    Top with pineapple, then

    top with whipped cream and nutmeg.

  • 6

    Serve chilled or at room temperature.
