Roast Beef Hash
ingredients
- 4 tbs Butter
- 1 large Onion, chopped
- 2 cloves Garlic, minced
- 2 medium Carrots, chopped
- 1 medium Bell Pepper, chopped
- 1 rib Celery with leaves, chopped
- 2 1/2 cups Potatoes, diced and cooked
- 3 cups Roast Beef, diced and cooked
- 1/4 cup Parsley, minced
- 1/4 cup Beef Stock or Broth
- 1/2 tsp Dried Thyme
- 1/4 tsp Dried Rosemary
- Few dashes of Tabasco
- Salt and Pepper to taste
- 2 tbs Vegetable Oil
- 4 Eggs, poached, optional
