  • 4 tbs Butter
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 2 medium Carrots, chopped
  • 1 medium Bell Pepper, chopped
  • 1 rib Celery with leaves, chopped
  • 2 1/2 cups Potatoes, diced and cooked
  • 3 cups Roast Beef, diced and cooked
  • 1/4 cup Parsley, minced
  • 1/4 cup Beef Stock or Broth
  • 1/2 tsp Dried Thyme
  • 1/4 tsp Dried Rosemary
  • Few dashes of Tabasco
  • Salt and Pepper to taste
  • 2 tbs Vegetable Oil
  • 4 Eggs, poached, optional
