Potato Salad with Feta, Olives and Red Pepper
ingredients
- 1 1/2 lbs red potatoes, cut into 3/4 inch cubes
- 1/4 cup fresh lemon juice, divided
- 1/4 teas. Salt
- 1 red pepper, cut into julienne strips
- 1/2 cup pitted ripe olives
- 3 green onions, minced
- 4 oz. feta cheese, crumbled
- 3/4 teas. dried whole oregano
- 1/2 cup olive oil
- Salt and pepper to taste
