  • 1 1/2 lbs red potatoes, cut into 3/4 inch cubes
  • 1/4 cup fresh lemon juice, divided
  • 1/4 teas. Salt
  • 1 red pepper, cut into julienne strips
  • 1/2 cup pitted ripe olives
  • 3 green onions, minced
  • 4 oz. feta cheese, crumbled
  • 3/4 teas. dried whole oregano
  • 1/2 cup olive oil
  • Salt and pepper to taste
