Zucchini Bread

This is the recipe my mother always uses, modified to be vegan.

  • Preheat oven to 350F. Mix oil and sugar, beat in “eggs,” zucchini and vanilla. Sift remaining ingredients together. Stir into first mixture a little at a time. Add chopped walnuts, if desired. Pour into two greased and floured loaf pans. Bake for 50 minutes, or until cooked through.
