Zucchini Bread
This is the recipe my mother always uses, modified to be vegan.
3 c. flour
½ tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
1 tsp. salt
2 c. zucchini, grated (approx. 2 zucchinis)
1 tsp. cinnamon
1 c. vegetable oil
2 c. dry sweetener
3 “eggs,” well beaten (EnerG, banana or applesauce equivalent)
1 c. chopped walnuts (optional)
Preheat oven to 350F. Mix oil and sugar, beat in “eggs,” zucchini and vanilla. Sift remaining ingredients together. Stir into first mixture a little at a time. Add chopped walnuts, if desired. Pour into two greased and floured loaf pans. Bake for 50 minutes, or until cooked through.
