Date Nut Bread

This is my mother’s recipe, modified to be vegan.

  • Preheat oven to 320F. Boil 1½ c. water in a medium saucepan. When boiling, add chopped dates, butter and dry sweetener. Let cool. Add baking soda, “egg,” vanilla, flour and walnuts. Stir, pour two into greased and flour loaf pans. Bake for 45-50 minutes or until cooked through.
