Eggplant, Sausage and Pasta Casserole

Layer a cooked eggplant and sausage mixture with ricotta and mozzarella cheese, top with pasta and more mozzarella cheese. Be sure to serve with warm garlic bread!
ingredients
- 2 lbs sweet Italian Sausage
- 2 tablespoons olive or vegetable oil
- 1 medium eggplant (1 1/2 lb)
- 1 large Spanish onion, chopped
- 1 clove garlic, chopped
- 2 teaspoons paprika
- 1 can (28 oz) crushed tomatoes
- 1 can (14.5 oz) stewed tomatoes *
- 1 can (6oz) tomato paste
- 1 tablespoon chopped fresh basil leaves or 1 teaspoon dried basil leaves, crushed
- Salt
- 1 box (1 lb) penne or similar pasta
- 1 container (15 oz) ricotta cheese
- 1 pkg (16 oz) mozzarella cheese, shredded

Make Ahead Tip Simplify cooking for your family by planning ahead. This recipe can be easily doubled. Assemble and bake one casserole for dinner and assemble a second casserole, wrap tightly and freeze. Thaw and bake for a quick, last minute dinner.
