Late summer is the best time for this recipe when you get fresh tomatoes and peppers. The tomato paste helps bring out a great tomato taste. Make sure when adding the jalapeno peppers that you remove the seeds and core otherwise it will increase the heat.

ingredients

  • 2 - 3 large red ripe tomatoes, chopped
  • 1/4 C onion, finely chopped
  • 1 jalapeno pepper, seeds & veins removed and finely chopped
  • 1 tsp garlic, finely diced
  • 1 tsp lemon juice
  • 1 tsp lime juice
  • 1 tsp tomato paste
  • 1/2 tsp black pepper
  • 1/2 C fresh cilantro
  • 1 tbsp salt (or to taste)
  • 1 tsp sugar

directions

Mix ingredients together and chill for 1 hour or more.

notes

Use tomato paste from a "squeeze" tube. Or, you can substitute ketchup for tomato paste and eliminate adding the sugar. Photo note: Snack time on the Independence.
