The meringue base can be made and kept in a cool dry place a few days before assembling it with whipped cream and fruit.
ingredients
- Meringue:
- 4 large egg whites
- 1 cup superfine or castor sugar
- 1 tsp vinegar
- 1/2 tbsp cornstarch
- Topping:
- 1 cup heavy whipping cream
- 1 1/2 icing sugar
- 1/2 tsp vanilla extract
- Fresh fruit of your choice.
