Fearless Kale
No longer have fear in eating dark leafy greens! This recipe with pineapple and peanut butter turns bitter greens like kale and collards into pure luscious magic everyone can enjoy.
ingredients
- 1 cup chopped onions
- 1 Tbs olive oil
- 1 bunch Kale (4 cups), cleaned and chopped into approx. 1" squares
- 20 oz. can crushed pineapple
- 3+ garlic cloves, finely chopped
- 1/3 cup peanut butter
- 1 Tbs Tabasco or hot sauce
- 1/2 cup chopped cilantro (Optional)
