Croquetas de Pollo

Chicken breast croquetes

  • 1 lb chicken breast (approx. 3 breast halves)

  • 3 tablespoons mayonnaise

  • ½ cup shredded cheese (e.g. mexican blend)

  • Bread crumbs

  • Vegetable oil for frying

  • Cook/boil the chicken, let it cool down preferably remove from the broth, so that the meat is dry and ready to be ground in a food processor. Once the chicken is ground add cheese and mayonnaise and mix until it becomes a soft dough.

  • Form the croquettes (small rolls) and bread them.

  • Proceed to fry them until golden and put on paper towel to remove excess oil.

  • They are great with white rice and green salad!!

notes:

If the crumbs don't stick enough, you can use some water to damp them and then bread them. Each person could eat form 3 to 5! Depending on what else you serve them with.
