Chicken breast croquetes
1 lb chicken breast (approx. 3 breast halves)
3 tablespoons mayonnaise
½ cup shredded cheese (e.g. mexican blend)
Bread crumbs
Vegetable oil for frying
Cook/boil the chicken, let it cool down preferably remove from the broth, so that the meat is dry and ready to be ground in a food processor. Once the chicken is ground add cheese and mayonnaise and mix until it becomes a soft dough.
Form the croquettes (small rolls) and bread them.
Proceed to fry them until golden and put on paper towel to remove excess oil.
They are great with white rice and green salad!!

If the crumbs don't stick enough, you can use some water to damp them and then bread them. Each person could eat form 3 to 5! Depending on what else you serve them with.
