- 1 1/2 cups cheddar or jack cheese, shredded
- 2 boxes Jiffy corn muffin mix
- 2 large eggs
- 2/3 cup buttermilk
- 2 cups creamed corn (put in food processor if desired to make corn kernels smaller)
Mix all ingredients together in a large bowl. Spray muffin tin with non-stick spray. Fill tins 2/3 full.
Bake for 20 minutes at 400 degrees or until golden brown.
