Geoduck Steak Piccata
Geoducks are a huge clam with a very long neck. These huge clams are very tasty. You can occasionally find harvested geoducks at the store. But the most fun way to get them is dig them out at a low tide – you’ll be muddy and wet up to your arm pits.
ingredients
- 2 geoduck necks, prepared (see below)
- 1 egg
- 1 C milk
- 1 C flour
- 4 tbsp butter
- 2 tbsp olive oil
- 1/4 C fresh parsley, coarsely chopped
- 2 tsp fresh garlic, minced
- 1/3 C lemon juice
- 1/3 C dry white wine
- 2 tbsp capers, drained
