What a wonderful rich sauce! The secret to this great sauce is to cook it slowly to let the flavors develop. Again, I got the basics for this recipe while we were up in Canada on “holiday” as they say. While researching this recipe there are literally dozens of variations you can make to it, but I like it as it is made below. I do find however, that when I’m using Italian sausage I use less salt.

ingredients

  • 1 tbsp olive oil
  • 4 slices bacon, chopped into small strips
  • 1 C onion, chopped (about 1/2 medium sized onion)
  • 1 C celery (about 3 stalks), finely chopped
  • 1/2 C carrot (about 1 carrot)
  • 4 cloves garlic, chopped fine
  • 1 1/2 lbs. ground beef or Italian sausage
  • 1 1/2 tsp dried oregano
  • 1/2 C parsley, chopped (or, 2 1/2 T dried)
  • 1 1/2 tsp rosemary, dried
  • 1/8 tsp grated nutmeg
  • 1/4 tsp red pepper, dried
  • 1/4 tsp black pepper
  • 1 1/2 tsp salt
  • 1 6oz can of tomato paste
  • 1 14oz can of diced tomatoes, undrained
  • 1 C white wine
  • 1 C milk
  • 3 - 4 C penne pasta, cooked al dente
  • Freshly grated Parmesan cheese

directions

In a large sauce pan or Dutch oven, heat olive oil with medium heat and add the bacon and cook for about 5 minutes or until the edges of the bacon get crisp. Next, add the onion and cook for about 3 minutes. Then add the celery, carrot and garlic and cook for 3-5 minutes. Add the ground beef (or Italian sausage) and cook until no pink remains, about 7 minutes. Break up the meat with a wooden spoon so it is crumbled, and spoon off any excess fat. Add the spices, tomato paste and tomato sauce and mix well. Next add the white wine and when adding the milk I like to add it in small portions stirring it in then adding more and again until all the milk has been added. Also, when adding the milk, make sure the mixture is not too hot otherwise the milk will separate. Reduce the heat to low and slowly cook for about 45 minutes stirring occasionally. Meanwhile, cook pasta; when pasta is al dente spoon pasta into bowls, top with sauce and serve topped with parmesan cheese.
