X-Tra Special Green Bean Casserole
A tastier version of an old time favorite!
ingredients
- 1 package baby bella mushrooms slice or minced
- 2 shallots minced
- 2 cloves garlic minced
- Marsala wine for cooking
- 1 can cream of mushroom soup
- 2 tsp Essence of Emeril seasoning
- 2 cans cut green beans
- 1 block grated fontina or white cheddar cheese
- 1 large can fried onions

Preheat oven to 350°

Sauté shallots and garlic in butter until soft. Add mushrooms with more butter. Let it cook down a little, then pour in some Marsala wine until coated. Simmer until all ingredients are soft. Remove from heat.

In a large mixing bowl, mix sautéd ingredients with mushroom soup and Essence of Emeril. Add a portion each of the cheese and onions, leaving some of both for topping. Fold in green beans.

Butter or spray a 9x12 pyrex. Pour mixture in. Top with cheese then onions. Bake for 30-45 minutes at 350° until heated through and onions are crispy.
