Nana's Roquefort Cheese - Garlic Salad Dressing

Mabel Seitz was our “Nana”, even though she wasn’t really our grandmother. This was her recipe. She served this salad dressing as the “House Dressing” at the International Golf and Country Club in Calexico, California where she managed the dining room. Nana was a magnificent woman who could cook, upholster furniture, make gallons of homemade ice cream, entertain effortlessly, and love people with all her heart.

ingredients

  • 1 pound Roquefort cheese, crumbled into large chunks
  • 1 quart olive oil
  • 1 cup fresh lemon juice
  • 1/2 cup vinegar
  • 2 tablespoons salt
  • 1 teaspoon dry mustard
  • 1 head garlic (about 20 cloves), put through a garlic press
