This delicious Summer Minestrone is simple to make, and bold on flavor. It has a couple of slight differences to give it a slight southwest feel. The jalapenos and pinto beans give it a slightly different flavor and texture than the traditional minestrone. Also, the mushrooms help give the flavor some extra body.

ingredients

  • 1 Large Onion-Diced
  • 2 Carrots-Diced
  • 1 Cup Mushrooms-Diced
  • 1 Tsp--Crushed Red Pepper
  • 1 Tsp-Diced Jalapenos
  • 1 Large Bunch Fresh Spinach-Chopped
  • 1 Large Zucchini-Diced
  • 2 Quarts-Low Sodium Broth
  • 1 14.5oz Can-Diced Tomatoes
  • 1 16oz Can-Kidney Beans (Rinsed and Drained)
  • 1 16oz Can-Pinto Beans (Rinsed and Drained)
  • 2 tsp-Oregano
  • 1 Cup-Small Pasta Shells
  • Salt and Pepper to taste
  • 4 Tbs-Extra Virgin Olive Oil
