Summer Minestrone
This delicious Summer Minestrone is simple to make, and bold on flavor. It has a couple of slight differences to give it a slight southwest feel. The jalapenos and pinto beans give it a slightly different flavor and texture than the traditional minestrone. Also, the mushrooms help give the flavor some extra body.
ingredients
- 1 Large Onion-Diced
- 2 Carrots-Diced
- 1 Cup Mushrooms-Diced
- 1 Tsp--Crushed Red Pepper
- 1 Tsp-Diced Jalapenos
- 1 Large Bunch Fresh Spinach-Chopped
- 1 Large Zucchini-Diced
- 2 Quarts-Low Sodium Broth
- 1 14.5oz Can-Diced Tomatoes
- 1 16oz Can-Kidney Beans (Rinsed and Drained)
- 1 16oz Can-Pinto Beans (Rinsed and Drained)
- 2 tsp-Oregano
- 1 Cup-Small Pasta Shells
- Salt and Pepper to taste
- 4 Tbs-Extra Virgin Olive Oil
