Bandera's "Macho" Salad

Main Ingredients
  • Fresh Greens (I use romaine and spring greens)
  • Shredded Chicken (rotisserie chicken from the grocery store and cut up the meat-so easy!)
  • Chopped Tomatoes (wedges or I use cherry tomatoes)
  • Diced Avocado
  • Big chunks of goat cheese
  • Sliced, toasted almonds
  • Cornbread croutons (I made cornbread from TJs, let it cool, then cube it up, brush it with a little butter, salt & pepper, bake at 400 degrees until crisp croutons)
  • Coarse black pepper as seasoning
  • Corn
  • Chopped dates
  • 2 Tbsp spicy brown mustard
  • 1/4 cup lemon juice
  • 1 tsp apple cider vinegar
  • 2 tsp brown sugar (you can cut a little less if you like)
  • 1/2 tsp kosher slat
  • 1/4 tsp black pepper
  • 1 Tbsp fresh garlic (I used about 2 cloves)
  • 1/4 tsp dried basil
  • 1/3 tsp dried oregano
  • 1 cup EVOO (you can use a little less if you like, this makes A LOT)

Mix up dressing and toss all ingredients together! This is a hearty dinner salad, enjoy!
