Bandera's "Macho" Salad
ingredients
Main Ingredients- Fresh Greens (I use romaine and spring greens)
- Shredded Chicken (rotisserie chicken from the grocery store and cut up the meat-so easy!)
- Chopped Tomatoes (wedges or I use cherry tomatoes)
- Diced Avocado
- Big chunks of goat cheese
- Sliced, toasted almonds
- Cornbread croutons (I made cornbread from TJs, let it cool, then cube it up, brush it with a little butter, salt & pepper, bake at 400 degrees until crisp croutons)
- Coarse black pepper as seasoning
- Corn
- Chopped dates
- 2 Tbsp spicy brown mustard
- 1/4 cup lemon juice
- 1 tsp apple cider vinegar
- 2 tsp brown sugar (you can cut a little less if you like)
- 1/2 tsp kosher slat
- 1/4 tsp black pepper
- 1 Tbsp fresh garlic (I used about 2 cloves)
- 1/4 tsp dried basil
- 1/3 tsp dried oregano
- 1 cup EVOO (you can use a little less if you like, this makes A LOT)
