Chicken Tortilla Soup
Easy and delicious soup.
ingredients
- 1 16 oz. can refried beans
- 2 14 oz. cans of chicken broth
- 1-2 cups cubed or shredded chicken
- 1 11 oz. can whole kernel corn
- 1 15 oz. can black beans; rinsed and drained
- 1 cup salsa
- 1 can mild Rotel(tomatoes & green chilies)
- 1 can Rotel(tomatoes, lime juice & cilantro)
- Shredded cheddar or Mexican cheese blend
- Tortilla chips
directions
Mix all the ingredients except the chips and cheese in a large pot. Heat thoroughly over medium heat. Reduce heat to a simmer; allow flavors to blend. Ladle over broken tortilla chips in a bowl. Sprinkle with cheese and serve.
