Chicken Tortilla Soup

Easy and delicious soup.

ingredients

  • 1 16 oz. can refried beans
  • 2 14 oz. cans of chicken broth
  • 1-2 cups cubed or shredded chicken
  • 1 11 oz. can whole kernel corn
  • 1 15 oz. can black beans; rinsed and drained
  • 1 cup salsa
  • 1 can mild Rotel(tomatoes & green chilies)
  • 1 can Rotel(tomatoes, lime juice & cilantro)
  • Shredded cheddar or Mexican cheese blend
  • Tortilla chips

directions

Mix all the ingredients except the chips and cheese in a large pot. Heat thoroughly over medium heat. Reduce heat to a simmer; allow flavors to blend. Ladle over broken tortilla chips in a bowl. Sprinkle with cheese and serve.
