  • 3 cups Homemade Turkey Stock, or canned low-sodium chicken broth
  • Coarse salt and freshly ground pepper
  • 4 tablespoons extra-virgin olive oil
  • 2 cups onion, chopped into 1/2-inch pieces
  • 1 1/2 cups carrots, chopped into 1/2-inch pieces
  • 1 cup celery, chopped into 1/2-inch pieces
  • 4 cloves garlic, chopped
  • 1 teaspoon ground cumin
  • 2 teaspoons dried oregano
  • 1/2 cup white wine
  • 1 cup canned crushed tomatoes
  • 2 1/2 cups shredded turkey meat
  • 1 1/2 cups long-grain rice, such as Uncle Ben’s
  • 1 cup frozen peas, defrosted
  • 2 tablespoons chopped fresh parsley
