Family Potato Salad

  • 6 c. cubed, cooked potatoes
  • 4 large hard-boiled eggs, peeled and chopped
  • 3/4 c. chopped dill pickle
  • 1/2 c. finely chopped celery
  • 1/2 chopped pimento
  • 1/2 c. chopped green pepper
  • 1 Tbsp. fresh lemon juice
  • 1 1/2 tsp. salt
  • 1 tsp. dijon
  • 1/4 tsp. pepper
  • 1 c. mayonnaise

In a large bowl combine all ingredients and gently fold in mayonnaise until mixture is well blended.
