Spinach puff

This is a “gourmet” quality spinach dish. If you follow diections to a tee it should come out puffy and creamy. Another one of my favorite spinach dish.

ingredients

  • 1 pkg. frozen chopped spinach
  • 1 tbsp. finely minced green onion
  • 3 eggs, beaten
  • 1/2 C sour cream
  • 1 C grated parmesan cheese
  • 1 tbsp. flour
  • 2 tbsp.butter
  • 1/8 tsp. nutmeg
  • 1/4 tsp. salt
  • dash black pepper

directions

    Cook spinach according to package directions, adding onion to the pan as spinach cooks.

    Drain well. Fold in eggs and sour cream. Blend in the parmesan cheese and flour. Stir in the butter, nutmeg, salt and pepper.

    Turn into a well buttered 1 quart casserole or souffle’ dish.

    Bake at 350° for 25 to 30 minutes or until center is set.

notes

(1)For 8 servings: Double the ingredients. Use a 2 quart casserole and increase baking time to 35-40 minutes. (2) Spinach puff may be assembled 2 hrs. ahead of time and baked just in time for serving.
