Italian Peasant soup
This soup is perfect for a wintery day. Everyone knows in my family that I love to make soup. It relaxes me and it makes me feel good that everyone is eating healthy. Cleve always loved when I cooked and cleaned the house. It made me happy to make him happy too. I love him.
ingredients
- 1 lb. Italian sausage (diced), take out of the casing and break apart
- 2 med. onion (chopped)
- 6 cloves garlic
- 1 lb. boneless chicken (diced)
- 2 cans (14 oz.) white kidneys
- 2 lg. cans chicken broth
- 1 can (14 oz.) diced tomatoes
- 1 tbs. dried Basil
- 1 tbs. dried Oregano
- 6 C or 1 bag of fresh Spinach. I use 1 frozon chopped spinach if I’m in a rush.
- shredded Parmesan cheese
directions
Cook sausage med. heat until no longer pink; drain. Add onions and garlic;saute until tender. Add chicken; Cook until no longer pink. Stir in the broth, beans, tomatoes, basil and oregano. Cook, uncovered for 10 minutes. Add the spinach and heat until wilted. Serve with parmesan cheese. ENJOY!!
