- 1 bunch broccoli (about 1 lb.)
- 2 sm. zucchini
- 1/2 lb. Asparagus
- 1/2 c. green beans
- 1 lb. linguine (or other pasta of your choice)
- 1 lg. clove garlic, chopped
- 1/2 small eggplant, sliced into 1/4-inch slices
- 1 basket cherry tomatoes, halved
- 1/4 c. olive oil
- 1/4 c. chopped fresh basil OR
- 1 tsp. leaf basil, crumbled
- 2/3 c. freshly grated Parmesan cheese
- 1/2 lb. mushrooms, thinly sliced
- 1/2 c. frozen green peas
- 1/4 c. chopped parsley
- 1 1/2 tsp. salt
- 1/4 tsp. crushed red pepper
