Arroz Con Gandules (Authentic spanish rice)
A friend of mine, Natasha Diaz that I knew from Target came to my home one day and showed me step by step on how to do this. Now I can make it easily thanks to her help.
ingredients
- 3 slices bacon,
- you have a choice-1/2 cup chopped ham or real chopped pieces of pork fat.
- 1/2 C chopped onion
- 1/2 C green pepper
- 1 can pigeon peas (undrained)
- 1 pkg sazon Goya
- 1 1/2 tbs. Goya Sofrito sauce
- 1/2 C tomato sauce
- 3 C water
- 2 C rice- (not minute rice) :)
- 1/2 tsp garlic
directions
stir-fry pork fat until almost brown, bacon, onion, green pepper and garlic- stir in 1/2 cup tomato sauce. Add 1 pk sazon seasoning. add 1 1/2 tbs. Goya Sofrito Sauce. Throw in peas until boil. Add rice- 3 cups water- cover. Reduce heat and simmer 20 minutes or until rice is tender.
notes
I use the real fat. You'll find it in the meat section of the store. It's very hard to cut into pieces. So first slice into diced pieces on the soft side, then cut (using scissors)on the hard side. Only use one 5 X 5" slab
