Medister Kaker (Pork Patties)

  • 2 1/4 lb ground pork

  • 1 tbsp salt

  • 2 cup milk

  • 1/3 cup potato or corn starch

  • 3/4 tsp ground pepper

  • 1/2 tsp nutmeg

  • 1/4 tsp ground ginger

  • oil

  • BROWN GRAVY:

  • 1/4 cup butter

  • 1/4 cup flour

  • 3 1/3 cups hot stock

  • 1 tsp soy sauce

  • salt and pepper

  • Mix the pork thoroughly with salt. Gradually stir in 2/3 of the milk. Make sure of the consistency. The mixture should become quite elastic with each addition of liquid. Add the starch and seasonings, then the remaining milk.

  • Spoon mixture to your palm and flatten to form into a patty. Fry in oil until brown on both sides. Add a little water or stock and simmer until cooked through for about 4-5 minutes. Use the cooking juices to make gravy. Melt the butter and let turn golden brown. Add the flour and cook until nut brown. Gradually whisk in the stock. Let simmer uncovered for around 10 minutes. Add the soy sauce. Season with salt and pepper if necessary.

  • Recommendation: Best serve with mashed potatoes and cooked vegetables.
