Boston Cream Pie
This is Uncle Mike’s favorite birthday cake.
ingredients
- Cake:
- 1/3 c. shortening
- 1 c. sugar
- 2 eggs
- 1 t. vanilla
- 1 1/4 c. flour
- 1 1/2 t. baking powder
- 1/4 t. salt
- 3/4 c. milk
- Cream Filling:
- 1/3 c. sugar
- 2 T. cornstarch
- 1 1/2 c. milk
- 2 egg yolks, slightly beaten
- 1 T. butter
- 1 t. vanilla
- Chocolate Glaze:
- 3 T. water
- 2 T. butter
- 3 T. cocoa
- 1 c. powdered sugar
- 1/2 t. vanilla

Cake:

Cream shortening, sugar, eggs and vanilla in large bowl. Combine flour, baking powder and salt. Add alternately with milk to creamed mixture. Pour into a greased and floured 9” round cake pan. Bake at 350 for 30-35 minutes. Cool 10 minutes and remove from pan. Cool completely and then cut in half horizontally. Fill with cold filling. Pour thickened glaze over top and let drizzle down sides. Chill before serving.

Cream Filling:

Combine sugar, cornstarch, milk and egg yolks in a saucepan. Cook and stir over medium heat until mixture boils. Boil and stir for 1 minute. Remove from heat and add butter and vanilla. Cool and then chill slightly.

Glaze:

Heat water and butter in saucepan to full boil. Stir in cocoa and stir well. Beat in powdered sugar and vanilla until smooth. Cool until it is like a thick syrup.
