This fantastic clam chowder comes together very quickly, and easily. In lieu of actual bacon, I used turkey bacon to give it a lighter flavor.

ingredients

  • 2 10 oz. cans baby clams, with juice
  • 1 8 oz. bottle clam juice
  • 4 slices turkey bacon
  • 1 onion, diced
  • 3 celery stalks, diced
  • 2 carrots, diced
  • 2 garlic cloves, minced
  • 2 potatoes, russet, cubed
  • 1/2 tsp dried thyme
  • 1 handful parsley, chopped
  • 2 bay leaves
  • 2 cups 2% milk
  • 1/4 cup all purpose flour
  • 1/2 cup half and half
  • 1 tbs black pepper, ground
  • 2 tbs olive oil
  • 1 tbs butter
Optional
  • Garnish with paprika and dried parsley
