Clam Chowder

Makes 8 servings
This fantastic clam chowder comes together very quickly, and easily. In lieu of actual bacon, I used turkey bacon to give it a lighter flavor.
ingredients
- 2 10 oz. cans baby clams, with juice
- 1 8 oz. bottle clam juice
- 4 slices turkey bacon
- 1 onion, diced
- 3 celery stalks, diced
- 2 carrots, diced
- 2 garlic cloves, minced
- 2 potatoes, russet, cubed
- 1/2 tsp dried thyme
- 1 handful parsley, chopped
- 2 bay leaves
- 2 cups 2% milk
- 1/4 cup all purpose flour
- 1/2 cup half and half
- 1 tbs black pepper, ground
- 2 tbs olive oil
- 1 tbs butter
- Garnish with paprika and dried parsley
