Miniature Crab Cakes from The Breakers Hotel

ingredients
- 1 tablespoon olive oil
- 1 teaspoon chopped onion
- 1 teaspoon chopped red pepper
- 1 teaspoon chopped yellow pepper
- 1 teaspoon chopped green onion
- 1/4 teaspoon Old Bay seasoning
- 1/4 cup white bread crumbs
- 1 tablespoon mayonnaise
- 1 dash Tabasco sauce
- 1 dash lemon juice
- 1 dash Worcestershire sauce
- 1 cup jumbo lump crab meat
- 1/4 cup cooking oil
- 1/4 cup all purpose flour
- salt and pepper to taste

Heat heavy skillet, add oil and saute all vegetables until translucent. Cool in refrigerator. When chilled, mix all ingredients together except cooking oil and flour and season with salt and pepper to taste. Form into 12 small patties the size of a silver dollar.

In a saute pan, heat cooking oil. Dust cakes lightly with flour and saute on both sides until golden brown. Place on buttered cookie sheet and bake at 350° for about 15 minutes or until centers are hot.
