Portuguese Kale and Sausage Soup
ingredients
- 1/4 cup olive oil
- 2 yellow onions (I use Leeks instead...only white and light green parts ) CLEAN the leeks well. I cut in half lengthwise and then soak them in a bowl of water with a little vinegar in the water for maybe 15 min.) Dry and then thinly slice.
- 4 cloves garlic minced
- 3 large potatoes, peeled and thinly sliced. (I buy the boxes of broth)
- 6 cups chicken broth
- 3/4 lb cooked turkey kielbasa cut into 1/2 slices (I like to brown the slices in a little olive oil or cooking spray before adding to the soup but you don’t have to)
- 1 bunch kale (thick stems and ribs removed) thinly sliced
- salt and pepper

1. In a large soup pot over medium heat, heat the oil

2. Add leeks and saute until soft /translucent and lightly brown (5-7 minutes)

3. Add garlic and cook for 1 min.

4. Add potatoes. Toss to coat. Saute 2 minutes longer.

5. Add stock, cover and bring to a boil. REDUCE heat and simmer gently. Cook til potatoes are tender (about 20 minutes)

6. REMOVE from heat. Using a handheld blender coarsely puree soup (If you don’t have a blender just mash the best you can). Make sure to leave some slices of potato.

7. ADD sausage. Cover. Return to heat til sausage is heated. (about 5 minutes)

8. ADD kale and cook UNCOVERED til it is wilted but still bright green (3-5 min)

Season with salt and pepper.
