Nikos' World Famous Chicken Curry

I’ve been making this dish since I moved to San Francisco. As it’s better made with two people, it’s a great dish to make with friends. It’s incredibly easy to do and you end up looking like a pro because people think you know how to cook after trying it. I also used this to impress my wife early on when we were dating – works every time! Brian and I made this dish a number of times over the years.

ingredients

  • 2 large onions chopped fine
  • 2 TBS canola oil
  • 1-2 inches ginger
  • 5-6 cloves of garlic
  • 1 jalapeno pepper chopped fine
  • 3 tomatoes
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1 tsp garam masala
  • 2.5 lbs boneless/skinless/chicken thigh
  • salt to taste

    1) Add canola oil to pan and heat on medium. Once heated add chopped onions and brown in oil until the onions reach a brownish color – stir often so as not to burn onions

    2) Add garlic, ginger and jalapeno to onion and continue to brown this mixture just until the ingredient are about to burn. Remember to stir often.

    3) Puree tomatoes in blender. Add puree to mixture in frying pan and let cook for quite a while until mixture becomes dark red and like a homogenous paste

    4) Add spices: cumin, corriander, turmeric, garam masala, and salt to mixture. Mix in and let them roast for 3-5 minutes. If mixture is too pasty, add a few tbsp water to break paste up slightly

    5) Add about 2.5 lbs of boneless, skinless chicken thigh, cut up into pieces to mixture. Stir chicken until all pieces are covered in mixture. Once all pieces covered, add enough water so that chicken is almost covered

    6) Cover and simmer for 30 minutes, stirring occasionally

    7) Serve with rice, naan break and a cold beer
