Blueberry Muffins

  • 2 cups flour
  • 1/2 cup sugar
  • 1 1/2 tsp baking powder
  • pinch of salt
  • 1 egg, beaten
  • 1 tsp vanilla
  • 1/2 cup canola oil
  • 1 cup buttermilk
  • 1 tbs flour
  • 2 cups frozen blueberries

Preheat oven to 350°F. Sift dry ingredients together in medium mixing bowl. Mix all wet ingredients together in another bowl. Add wet ingredients to dry ingredients and stir until combined. In a bowl, mix blueberries with 1 tbs flour. Fold blueberries into batter. Scoop into muffin pan. Bake for 20-25 minutes or until inserted toothpick comes out clean.
