Stir Fry
Choose protein, marinate, chose veggies, choose sauce.
ingredients
- Protein: steak, pork, shrimp, chicken
- Marinate: whisk 1 egg white, 1 T rice wine, 1 T cornstarch toss and refrigerate 1 hour.
- 3 cups veggies any combo: carrots, celery, bell pepper, scallions, onions, mushroom, cabbage, snow peas, asparagus, tomatoes, spinach, broccoli, cauliflower peas
- Clear sauce: 3/4 c chk broth, 1 T cornstarch, 2 T rice wine, 1/2 t sesame oil, 1 t salt 1/2 t sugar.
- Sweet-and-sour sauce: 3/4 c chk broth, 2 T cornstarch, 1/4 c ketchup, 2 t soy sauce, 3 T rice vinegar, 1/4 c sugar, 1/2 t salt, 1 t sesame oil.
- Brown sauce: 1/2 c chk broth, 1 T cornstarch, 1 T soy sauce, 1 T hoisin sauce, 1 T rice vinegar.
- Oyster sauce: 3/4 c chk broth, 1 T cornstarch, 1 T rice wine, 1 T soy sauce, 3 T oyster sauce, 2 t sesame oil.
- Spicy Sauce: 3/4 c chk broth, 1 T cornstarch, 2 T soy sauce, 2 T rice vinegar, 2 T rice wine, 1/2 t sesame oil, 1 T sugar, 2 t Asian chili sauce.

Drain excess marinade. Heat 1/4 inch oil in skillet over medium heat. Add protein and stir till almost opaque. Transfer to plate, discard oil. Heat pan over high heat, add 2 T oil, 2 clove minced garlic (or 4 cloves for spicy sauce) 1 to 2 T minced ginger, 2 minced scallions and pinch of salt and pinch of sugar. Stir fry 30 seconds. Add veggies stir-fry till tender-crisp. Add protein and sauce and stir until sauce is think and veggies and protein are cooked through about 3 minutes. Thin with chk broth if needed. Garnish with scallions, peanuts, sesame seeds, and or cilantro.
