Calzone

ingredients

  • CRUST
  • 1 cup warm water
  • 2 Tbs. shortening
  • 3 1/4-3-1/2 cup flour
  • 1 tsp. salt
  • 3 Tbs. sugar
  • 1 egg
  • 1 Tbs. yeast
  • Sauce
  • I just use a jar of your favorite spaghetti sauce
  • Filling
  • 1/2 - 3/4 lb. Italian sausage browned
  • 2 1/4 cup mozzarella cheese, shredded
  • 1 1/4 cups Parmesan cheese
  • You may use pineapple, mushrooms, olives, onions spinach, chicken onions whatever you want to fill your calzone with.

    Combine water and shortening and heat just until melting. In bowl blend 1-1/2 cups flour with sugar, salt and yeast. Add warmed water and shortening. Beat 2 minutes at low speed. Add egg and beat 1 minute at high speed. Mix in about 1-1/2 cups flour and knead 5 minutes. (add a little more flour if needed).

    Divide dough into two parts. For each Calzone roll one part into an 11 inch circle. Brush lightly with olive oil and spread sauce over half the circle within 1/2 inch of edge. Top sauce with your favorite filling and cheeses. Fold plain half of dough over filling to within 1/4 inch of edge. Roll bottom edge over top and pinch or crimp to seal. Brush top with oil if desired. Repeat for second Calzone. Pierce top a few places with fork. Bake at 500 for about 6 minutes or until brown.
