Paula's Carrot Soup with Ginger
Colorful and fragrant carrot and ginger soup is a light and soothing soup.
ingredients
- 1 medium onion, chopped
- 1 tablespoon olive oil
- 8 large carrots, peeled and sliced
- 1 medium potato, peeled and cubed
- 1-2 tablespoons freshly grated ginger
- 5 cups chicken broth
- salt & pepper, to taste
directions

1- In a soup pot, saute onion in olive oil. Do not brown.

2- Add carrots and potatoes, and stir. 3- Add ginger, broth and bring to a boil.

4- Turn heat to medium-low, cover partly, cook until vegetables are tender, 20-25 minutes.

5- Remove from heat and cool slightly. 6- Puree soup in blender or with immersion blender. Return to heat.
notes
Make ahead and refrigerate. Recipe doubles easily and freezes well.
