Spinach Au Gratin

ingredients

  • 2 packages chopped frozen spinach
  • 4 TBS butter
  • 2 TBS flour
  • 1 cup milk or cream
  • 1/2 tsp dry mustard
  • 1/3 tsp garlic salt
  • pepper to taste
  • 1/2 cup grated Parmesan cheese

    Cook frozen spinach until barely wilted.

    Drain well in a collander. Make a cream sauce by melting butter, adding flour, mustard, salt and pepper. Using a whisk as you add the milk or cream. Whisk until thick. Add half the grated cheese, mix well and add the spinach. Pour into a shallow, buttered baking dish. Sprinkle the rest of the cheese over the top.

    Bake at 350° for 30-40 minutes.
