Chicken Quesadillas
Easy to make for lunch or dinner with a salad.
ingredients
- 3 1/2 c shredded rotisserie chicken
- salt and pepper to taste
- 1 large onion, thinly sliced
- 2 T vegetable oil
- 5 oz grated Monterey Jack cheese
- 8 tortillas
directions
Salt and pepper chicken. Cook onion in oil until golden. Add chicken and cheese to onions. spread chicken mixture on 1/2 or a tortilla and fold tortilla in half. Lightly oil grill pan or frying pan and cook tortillas until cheese melts and the tortillas are lightly browned. Repeat with the rest of the tortillas.

Garnish with sour cream and salsa.
