Lobster Corn Chowder
This recipe takes a while to prepare, but is delicious. If you are a chowder lover, this is for you!
ingredients
- 2 1 1/2 pound lobsters
- 1 T oil
- 5 c low sodium chicken broth
- 1/2 c white wine
- 3 ears of corn, kernels removed and cobs reserved
- 3 strips of bacon, diced
- 1 onion, chopped
- 2 large carrots, diced
- 3 celery stalks, diced
- 2 c heavy cream
- 2 medium potatoes, diced into 1/2 inch pieces
- salt and pepper to taste
- 1 tsp thyme, chopped
- 1 tsp chives, chopped
directions
Boil lobsters until they are red. Cool and remove meat. Cut meat into small pieces. In a large pot, heat oil. Add lobster shells and sauté until browned. Add corn cobs, chicken broth and wine, bring to a simmer and cook until reduced to about 2 1/2 cups. In a dutch oven, sauté bacon until crispy. Add onions, carrots, celery and corn kernels and sauté until tender. Strain the lobster/ corn broth into the dutch oven, add cream and bring to a simmer. Stir in potatoes and simmer until the potatoes are tender. Stir in lobster meat, salt, pepper, thyme and chives. Cook until meat is warmed through. Serve hot.

Serve this with crusty bread and you have a meal. It is very tasty, but filling!
