ingredients

  • 1 box sure-jell fruit pectin
  • 3/4 cup water
  • 2 pints strawberries, fresh or 16 oz frozen strawberries
  • 4 cups sugar

    If using fresh strawberries, wash and stem them, discard stems.

    If using whole frozen strawberries, thaw 16 oz. of strawberries, making sure there are no stems or leaves present.

    Mash thawed or fresh strawberries making 2 cups of crushed strawberries.

    Mix the strawberries and 4 cups sugar together. Let set 10 minutes.

    If sugar is still grainy, place container of mixture in microwave and cook on high setting 60 second. This should finish dissolving the sugar. Stir the mixture and set aside.

    In a small saucepan, place the 3/4 cup water and 2 box sure jell pectin. (pectin may start out lumpy)

    Bring the pectin and water to a boil, stirring constantly.

    Continue stirring while boiling one minute.

    Remove from heat.

    Stir pectin mixture into strawberry-sugar mixture.

  • 11

    Stir constantly until well blended and sugar is completely dissolved, about 3 minutes.

    Pour into 5 -1 cup containers within 1/2 inch on top. Cover.

    Let stand at room temperature 24 hours until set.

  • 14

    Refrigerate up to 3 weeks.

  • 15

    It can be stored in freezer for up to 1 year.

  • 16

    Thaw in refrigerator.
