Bourbon Sweet Potatoes
ingredients
- 1/2 stick unsalted butter, plus more for baking dish
- 4-6 sweet potatoes, peeled and sliced about 1/2 inch thick
- Salt and pepper
- 1/2 cup firmly packed light brown sugar
- 1/2 cup bourbon
- 2 tablespoons maple syrup

Butter an ovenproof casserole dish.

Arrange the sweet potato slices in the prepared dish and season with salt and pepper.

In large saucepan, combine the sugar, butter, bourbon and syrup and bring to a boil over medium heat.

As soon as the sauce is boiling, pour it over the sweet potatoes.

Bake the casserole, basting and turning occasionally, until they are soft and tender.

Bake for 45-60 minutes.

Once we tried this casserole, it quickly replaced the traditional sweet potato casserole we'd been having for years.
