Chicken Marsala
ingredients
- 2 1/2 pnds chicken cutlets
- potato starch or flour
- salt
- pepper
- olive oil
- 1 lg can of mushrooms
- 3 cloves crushed garlic
- 1/4 C white wine or semi-dry wine
- 2 tsp lemon juice
- 1 C chicken stock
- fresh parsley

Preheat the oven to 350

Mix the flour, salt and pepper and dip the chicken cutlets in it. place in a lightly greased pan.

Cover the pan loosely and bake for a few minutes on each side.(You can also broil)

Saute the mushrooms and garlic until lightly brown

Add the wine, lemon juice, chicken stock and seasonings.

Bring to a boil and let it simmer for 2 minutes

Pour the sauce over the cutlets and bake covered for 15-30 minutes. Then uncover till brown
