Southern Red Velvet Cake with Cream Cheese Frosting

- Dry Ingredients
- 2 1/2 cups cake flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- Wet ingredients
- 1 cup buttermilk
- 2 eggs
- 1 teaspoon white vinegar
- 1 1/2 cups vegetable oil
- 1 ounce red food coloring
- 1 teaspoon vanilla extract
- Frosting
- 4 cups confectioners sugar
- 1 pound of cream cheese (room tempature)
- 1 pound of butter (softened)
- 2 teaspoons vanilla extract

Preheat oven to 350 degrees. Grease three 9 inch round cake pans.

Sift together all dry ingredients in a bowl. Add all wet ingredients in an electric mixing bowl and beat on medium speed until well blended. Slowly add dry ingredients to the bowl, until all ingredients are combined.

Evenly distribute the batter between the cake pans. Bake for 20 - 30 minutes. Remove from oven and cool for 10 mintes in cake pans, then invert onto cooling racks to cool completely.

Frosting: Mix together the cream cheese and butter. Gradually add the confectioners sugar until it reaches desired sweetness and smoothness. Beat in the vanilla extract.
