A light tiger prawn curry.

ingredients

  • 400g king prawns (I like Honduran king prawns or tiger prawns best)
  • 1 tin of coconut milk
  • 2 tbsp of thai red curry paste
  • 1/2 onion
  • 2 tbsp of fish sauce
  • 1 red chilli
  • 1 lime
  • 1 chicken stock cube
  • 1 small bunch of coriander
  • 2 small cups of rice

    Very delicious! I made the curry paste from scratch, and used quite a lot of lime juice. I also added plum tomato quarters, fitted in nicely! Filing this in my favourites :)
