ebi raisukaree (coconut, lime and coriander curry)
A light tiger prawn curry.
ingredients
- 400g king prawns (I like Honduran king prawns or tiger prawns best)
- 1 tin of coconut milk
- 2 tbsp of thai red curry paste
- 1/2 onion
- 2 tbsp of fish sauce
- 1 red chilli
- 1 lime
- 1 chicken stock cube
- 1 small bunch of coriander
- 2 small cups of rice
