Spinach Artichoke Dip
ingredients
- 1/2 purple onion, diced
- 1/2 stick butter
- 3 tbsp garlic, minced
- 1 (10 oz) pkg spinach, chopped
- 8 oz cream cheese, RT
- 8 oz sour cream
- 1/4 c Parmesan cheese
- 1 (14 oz) can artichoke hearts, quartered and drained
- 1 c Monterrey jack cheese, shredded
- Salt & Pepper

Preheat oven to 350° F.

In a skillet melt butter over medium heat and sauté the garlic and onion for about 3 to 5 minutes or until onion is translucent.

Microwave the frozen spinach and then squeeze out all of the water and set aside.

In a medium bowl stir in the onion mixture, spinach and all remaining ingredients. Season to taste with salt and pepper.

Transfer to a 1 1/2 qt dish and bake for 25 minutes. Serve with bread and/or crackers.
