Vodka Cream Pasta
ingredients
- 1 tbsp olive oil
- 1 tbsp butter
- 2 cloves garlic, minced
- 2 shallots, minced
- 1 c vodka
- 1 c chicken stock
- 1 (28 oz) can crushed tomatoes
- Salt & Pepper
- 1 lb penne pasta
- 1/2 c heavy cream
- 1/4 c fresh basil, shredded
- Parmesan cheese

Heat a large skillet over moderate heat. Add oil, butter, garlic and shallots. Gently sauté shallots for 3 to 5 minutes to develop their sweetness. Add vodka to the pan and reduce by half, this will take about 2 to 3 minutes. Add chicken stock and tomatoes and season to taste with salt and pepper. Bring the sauce to a boil then reduce the heat to simmer.

While sauce is simmering, cook the pasta in salted boiling water until al dente. Drain pasta.

Before you take the sauce off the heat pour in the cream and basil. Allow sauce to return to a bubble then remove from heat.

In a serving bowl pour the sauce over the pasta and sprinkle the top with Parmesan cheese.
