Sour Cream Pancakes

- 7 tbsp all-purpose flour
- 1 tbsp sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 c sour cream
- 2 eggs
- 1/2 tsp vanilla extract
- Butter

Heat a nonstick pan over medium heat.

Stir the flour, sugar, baking soda and salt together in a medium bowl. Dump the sour cream on top and stir it together gently. It is okay if the texture appears uneven. Whisk the eggs and vanilla in a separate bowl and then stir them into the sour cream mixture, being careful not to over mix.

Brush the pan with butter and pour in the batter. Cook each pancake for about 2 minutes on each side or until golden.

Serve with maple syrup.
