shrimp in serrano chile marinade

servings:Makes 4 lbs.
prep time:
20 minutes
cook time:
1 hr. marinade
total time:
1 hr 20 min

  • 4 lbs. raw/cleaned/deveined shrimp
  • 15-20 limes for juice marinade
  • 1/2 white onion
  • 4-6 serrano chiles (more for heat)
  • 1 cucumber sliced or chopped for garnish
  • 1/2 purple onion sliced for garnish
  • cilantro branches for garnish
  • salt to taste

In blender put chiles, white onion, salt and about 3 fingers measure of lime juice. Should be watery enough to soak the shrimp and marinade for 1 hour. Add more lime juice if needed. Turn shrimp every so often to marinade all over. Shrimp will start to turn pink as they cook in the marinade. Chop/slice your vegetable garnish and add as shrimp are pink enough. Take to the table and enjoy!

other veggies you can use for garnish: Quartered tomatoes, fresh avocado chunks, green onion, red radishes sliced. Buen provecho!
